“Cooking Live Lobster. First put the lobster in the freezer for at least 2 hours to render it unconscious. Fill a large pan with 4 litres of water and 170g of salt and bring to the boil. Add the lobster and poach for 12 minutes. Remove it from the water and leave it until cool enough to handle.”
